Fish and Chips

So we always look for things to hang our hat on. We love pulling into the drive way after a long trip, sonic at happy hour (or any time with the tiger card...that's for the Glen Rose folks), our favorite TV show, football (barring the lock-out), etc, etc... Well in Uganda it is fish and chips (yes I know what many of you are thinking...THEY'RE FRENCH FRIES, but we are fully immersed in the culture...so at least for a couple of more months they are chips...and yes I have also been calling soccer football - I actually showed Martin a picture of American football today and told him what it was, kind of funny)Now back to the original train of thought...fish and chips. If you ask Martin what he wants to eat it will 90% of the time either be eggs or fish and chips...well tonight fish and chips were for supper. Let me explain why this is such a big deal...first of all they are amazing. The batter on the fish is so light and the fish is incredible. And the chips (aka fries), let's just say there is not a french fry in America that compares. The are always fresh cut, they cut them like steak fries (the thick cut you get in the freezer section) and they are fried perfect...crisp on the outside and soft on the inside. The second reason is because it is a great comfort food. There have been a few occasions when the day has not been good (BTW - today was a good day) and the meal was fish and chips...so it is like a warm blanket of comfort. So today I toast fish and chips (at least the kind we have at the Emmaus house in Kampala...and if you're in the neighborhood drop by Winnie would be glad to make you some)

And tomorrow morning...pancakes by Livingston...those two meals easily add a few pounds!!
